Pale gold, shiny, gold reflection, fine mousse and lively. A combination of a modern and traditional Champagne; open, lively, spontaneous, with refreshing notes of wild anise. It is also substantial, tasty, almost vineux with hint of fatness with yellow fruit and dry apricot. The power and the fatness of the Ay hill sides offer, in their prime youth, the opportunity to create this beautiful cuvee of conviviality and spirituality. Fermented and aged in stainless steel vats for 6 months, aged in oak for 6 months followed by 2 years of bottle ageing.
