This is a new release from a vintage in which "Chabis has excelled" (The Sunday Times). The cellar only ships once the wine is at its richly honeyed peak of perfection. Even so at seven years of age this glorious wine has still has a long life ahead. Daniel-Etienne Defaix's family have been producing wines since the 16th century. Theirs is one of the oldest family-run estates in Chablis with vineyards in many of the region's greatest Crus. Rich and creamy thanks to eighteen months lees ageing and many years in bottle. Fabulous acidity and classic minerality. Delicious with foie gras scallops or creamy mushroom dishes.
