Daniel-Etienne Defaix's family have been producing wines since the 16th century. Theirs is theirs one of the oldest family-run estates in Chablis with vineyards in many of the region's greatest Crus. After seven years of gorgeous honeyed age this Premier Cru Chablis from the prized Cote de Lechet vineyards is still thrillingly crisp with elegant mature complexity. Rich and creamy thanks to eighteen months lees ageing with classic fine minerality. Delicious with foie gras scallops or creamy mushroom dishes.
