Dividing Carcassonne from Beziers the mountainous region of Minervois is separated from its cousin Corbieres by the Canal de Midi and is "home to lots of undiscovered gems" (The Times). The winery is owned by Paulo Michel and this their speciality is made by Maurice Cathala. The estate is famous locally for its church which is all that remains following a siege by Visigoths. Local folklore has it that the encircling cacti were planted in order to dissuade 'visitors' whilst the locals set about its restoration. Deep nearly opaque purple with fragrant floral nose of spice and liquorice. Lashings of velvety round fruit overlie a firm well-balanced structure.
